Amatriciana: A Taste of Italian Tradition in Dublin

Few Italian dishes carry as much history and character as Amatriciana.



Its story begins in Amatrice, a small town in Lazio, where the original dish was known as gricia—made with pasta, guanciale and pecorino. With the arrival of tomatoes in Italian cooking, the recipe evolved into the Amatriciana we know today: a simple combination of tomato, guanciale, pecorino and pasta, built around quality ingredients rather than complexity.


Over generations, Amatriciana became a symbol of Roman and central Italian cuisine. Its importance is such that the traditional recipe is now recognised and protected as a Traditional Speciality Guaranteed (TSG) at the European level, preserving the identity of this historic dish.
