Bolognese: The Heart of Italian Comfort Food

Few Italian sauces are as famous around the world as Bolognese. But the authentic Italian story behind it is quite different from the version many people know.


Its origins lie in Bologna, Emilia-Romagna, where ragù alla bolognese developed as a slow-cooked meat sauce. Traditionally, it is made with finely minced meat, vegetables, tomato and time—slow cooking allows the ingredients to develop a rich, deep flavour.

Unlike the familiar idea of spaghetti Bolognese, in Bologna the ragù is traditionally served with fresh tagliatelle, whose wide, textured surface holds the sauce perfectly. It is also a fundamental ingredient in dishes such as lasagne alla bolognese.
